Guests, all of whom have saved room in their stomachs for dessert, will ask: 'What type of pies did the hosts provide? What was the quality of the crust? Was this pumpkin pie pumpkin-y enough?' Claire and Brad want you to pass your guests' pie grading, so they've endeavored to make the perfect Thanksgiving pie.

Imagine a pumpkin pie with pecan pie’s best feature-obviously, the candied nut topping. Now spike the custard with rye whiskey, up the flavor of the crust with rye flour, and voilà: pecan-rye pumpkin pie. We use Libby’s canned pumpkin because it’s reliably consistent, with an ideal water content, and few variations in flavor (and no, we’re not paid to say that). The egg wash added during the blind bake serves as a moisture-fighting barrier-a seal-tight guarantee that the bottom crust won’t get soggy. The rye flour will make the crust look darker than your standard pie dough. If it starts getting too dark while baking with the custard filling, tent it with a ring of foil.

It works well with the pecans if you stiff whip the whites, fold in sugar and pecans, then bake them separately before placing on top.
one tip found out by accident, mix all the pumpkin pie filling except the pumpkin, overnight. So that spiced custard is so much more flavorful and custardy.

Most people in America prefer overly sweet desserts, so I can’t say I’m surprised you didn’t win (I say that in the best way). Not everyone has a chefs palette, and most of us are used to eating bland fast food everyday. What I’m trying to say is, those people surely don’t have the range to rate your delicious pies!!

A question and a thought... Why are you blind baking the crust for a fruit pie? Also is it possible that using less vodka allows a little bit more gluten to develop which you might need because you're using right crust? Since right crust doesn't have as much gluten or do I have it wrong?

I have a lot to say about this video first of all I loved it a lot. I have been a member of Adams County 4-H for 10 years now so all the places you guys visited I go there all the time for 4-H events. I am so sad that I was not at the fair that day because I would've been able to meet you guys. But loved the video maybe you guys could make another trip down to Colorado for something else in the future. Also I do not want to be rude but Gloria the lady you talked to she is one of the leaders of 4-H and is a not kind lady at all she has even made me cry a few times and has lawyers been rude to my family and I specifically my late grandmother but that is beside the point thanks for the great video!!!

Don't get Libby's pumpkin Pie MIX though that's cheating lol get what these guys get :D. My mom accidently got the mix and returned in to get what we usually get. We're like "mom it's tradition to make your own! that's what makes it good!" my mom thought the same thing it truly was an accident the store was crazy the day we went grocery shopping.
Somebody should have mentioned how *&^% hard it is to find rye flour in the U.S. now. Definitely plan ahead and order it online. We went to 6 stores in Denver (including an eastern European grocery store)--no rye flour anywhere. Some cursory investigation showed that there are fewer rye growers in the U.S. than in the past. Maybe easier on the east coast?
Sooooo so far this crust is garbo. Tastes great and is super buttery... but it domed on me SO BAD. Looked like I made chicken pot pie. And I even tried scoring it on my second attempt
My crust puffed up a bit after I took out my weights (I used dried beans), but I pushed it back down while egg washing and it turned out well. You could try freezing for 10-15 minutes prior to baking to help the butter chill more and maybe it wouldn't dome as much?
it's all about the adventure of new experiences and your internal drive to compete against others, who are there for the adventure of competition and having fun, fun, fun, ... YUMMY!!
